From tart raspberries to juicy strawberries and plump blueberries, it's the perfect time to get creative in the kitchen and try your hand at delicious jams and preserves. This is a fantastic way to enjoy these berries year-round, transforming them into spreads for toast, fillings for pastries, or delightful dollops on ice cream. Bilberries, Blackcurrants & Redcurrants
These tart berries are packed with pectin, a natural gelling agent, making them ideal for jams which will set well. Why not try your hand at making a mixed berry jam which combines bilberries, blackcurrants, and redcurrants. Blackcurrants add a depth of flavour, while redcurrants provide a touch of sweetness. For a smoother jam, you can remove the skins from blackcurrants and redcurrants after cooking the berries.
Cherries & Strawberries
These juicy fruits are perfect for jams with a vibrant colour and a touch of sweetness. Cherries have a high sugar content, so you might need less additional sugar for this jam. Pit the cherries before cooking and consider adding a squeeze of lemon juice to balance the sweetness.
